Ingredients
- Couscous or tagliatelli for 4
- 8oz Salar Flaky Smoked Salmon broken into flakes
- 1 Large Avocado
- lemon Juice
- Approx 1/2" fresh ginger (or to taste)
- a good handul of fresh chopped parsley
- 3 tablespoons good quality mayonnaise
- 4 tablespoons natural yoghurt (Greek is good)
- black pepper
- 1 lemon
- Crispy green salad
Method
Put the Couscous or tagliatelli on to cook. Slice the avocado into spoon sized pieces and sprinkle with plenty of lemon juice. Slice the ginger into very small slivers. Stir together the mayonnaise, yoghurt, parsley and ginger into a sauce. Warm gently for a few seconds. Fold in the avocado and the Flaky Smoked Salmon, add freshly ground black pepper to taste.
Spoon into bowls of warm, seasoned couscous or onto beds of tagliatelli, garnish with lemon wedges and serve accompanies by a green crispy salad.
