Ingredients
- 200g Salar Flaky Smoked Salmon broken into pieces
- a head of fennel
For the dressing -2 tablespoons lime juice -4 tablespoons olive or grapeseed oil -2 teaspoons Pernod -black pepper -large pinch each of sugar and salt -¼ teaspoons Dijon mustard.
Method
Wash and dice the fennel, retaining any leafy fronds for garnish. Make the dressing by dissolving the salt and sugar in the lime juice and stirring in the mustard before add the oil and the Pernod. Combine all the ingredients. Chill for several hours before serving so that the flavours merge.
Serve at room temperature, garnished with a few fennel leaves.
