Ingredients
- 1/2oz butter
- 1 small onion, finely chopped
- 2 teaspoons curry powder
- 1 tablespoon mango chutney
- 4 tablespoon mayonnaise
- 4 hard boiled eggs
- 8 oz Salar Flaky Smoked Salmon
- 1 egg white
- 1 egg beaten
- 2 oz fresh white breadcrumbs
Method
Saute onions in butter until cooked but not coloured. Add curry powder and cook for a minute. Cool and add to mayonnaise with the chutney. Put salmon in food processer with an egg white, pulsate until blended. Mould round the eggs with floured hands. Dip into egg wash and breadcrumbs, twice Deep fry in hot oil until crips and golden Cut in half and serve hot or cold with curried mayonnaise and crispy salad.
