Salar Flaky Smoked Salmon Patties
Lovely Smoked Salmon Patties, made with mashed potato, onion and leek.

Ingredients
- 350g potatoes
- 2 tablespoons olive oil
- 1 medium red onion, finely chopped
- 1 leek, sliced
- 100g or more Salar Flaky Smoked Salmon broken into pieces
- salt and pepper
- good handful of fresh chopped parsley
Method
Put the potatoes on to boil and, when cooked, mash them roughly.
Heat 1 tablespoon olive oil in a pan and cook the onion and the leek until soft but not brown.
Mix together the Flaky Smoked Salmon, the cooked onion and leek and the mashed potato - gently so you don’t break up the Flaky Smoked Salmon too much. Season.
Heat the remaining olive oil. Shape the mixture into patties and cook for 5 – 6 minutes or longer to get a crisp golden coat. Turn once.
Garnish generously with the chopped parsley.
Serve with salad or stir-fry vegetables – kids love them!
