Smoked Salmon and Mayonnaise kedgeree

Ingredients

  • 8 oz. Salar flaky smoked salmon
  • 1 red onion
  • 3/4 hard boiled eggs
  • preferably free range
  • lots of parsley
  • a pint of fish or vegetable stock
  • 6 oz long grain rice
  • 4 Tblsp mayonnaise
  • 2 oz butter

Method

Chop onion quite finely and fry in butter, soften and then add rice and fry briefly. Pour over some stock, slowly adding until rice is cooked, but don't overcook it. Add eggs, chopped into quarters or eighths. You can do all this in advance, and then before serving, add salmon and heat it up with 4 Tbsps mayonnaise. I make my own, but Hellmanns (or any other) would do. Keep stirring until hot, and add chopped parsley just before serving.
