Smoked Salmon, Spinach, Leek and Mushroom En Croute

Ingredients
- 1 finely chopped leek
- 1 finely chopped onion
- 300g chopped mushrooms
- 150g chopped spinach (frozen if fresh not available)
- 1 oz butter
- 2 tablespoons olive oil
- 500g Flaky Smoked Salmon,
- 2 sheets ready roll puff pastry.
Method
Heat oven to 190ºC. Melt butter and olive oil in a frying pan, add onions and leeks and fry until soft. Add mushrooms and spinach and cook to form a paste. Remove the skin from the Flaky Smoked Salmon and place the salmon in the centre of one sheet of pastry. Top with the vegetable paste. Dampen edges of pastry and top with other sheet of pastry to form a parcel, turning up edges of bottom sheet. Make 2 or 3 small slits in top of parcel and brush with milk. Place in oven for approximately 30 minutes or until pastry is slightly browned.
