Smoked Salmon and Egg Bake with a Cheese Sauce and Paprika

Ingredients
- 4 hard boiled eggs
- milk, 200g Flaky Smoked Salmon
- 11/2 oz butter
- 2 oz plain flour
- mature cheddar cheese (grated) to taste
- black pepper
- paprika
Method
1. Shell and cut the hard boiled eggs lengthways. 2. Remove the yolks, put them into a bowl and mash them with a drop of milk. 3. Mix in the Flaky Smoked Salmon and season with black pepper. 4. Pile the mixture back into egg whites & place them upside down in an oven-proof dish. 5. Melt the butter in a saucepan, stir in the flour and slowly add the milk, stirring all the time, to make a white sauce of a thick, pouring consistency. 6. Add the grated cheese and season to taste, then pour the cheese sauce over the eggs and top with a generous sprinkling of grated cheese and then paprika on top. 7. Grill until heated through and crispy on top, serve with a crisp salad - Wonderful!
