Smoked Salmon and Bacon Rice Salad

4 Smoked Salmon Salad,Savoury Fry Less than 30 minutes

Ingredients

  • 300g Salar Flaky Smoked Salmon broken into large flakes
  • 300g cooked long grain rice
  • 2 rashers lean bacon (chopped)
  • 2 cloves garlic (crushed)
  • 1 medium onion
  • 3 sticks celery (chopped)
  • 4 tomatoes (chopped)
  • 1 large green pepper (deseeded and chopped)
  • 3 tablespoons lemon juice
  • 2 teaspoons parsley or coriander
  • salt and pepper to taste
  • 2 tablespoons olive oil.

Method

Heat the oil in a large frying pan and gently brown the onion and garlic, add the bacon and cook, add the remaining vegetables and cook for a further 5 minutes. Add the lemon juice, rice and herbs and cook for 4 more minutes, stirring continuously. Gently stir in the Flaky Smoked Salmon , add salt and pepper to taste, cook for a couple more minutes and then serve.
