Smoked Salmon Pasta with a Creamy Sauce

Ingredients
- 200g Ardtaraig Smoked Salmon trimmings
- 3 eggs
- 2 tablespoons single cream
- 4 tablespoons freshly grated Parmesan cheese
- 2 tablespoons chopped flat leaf parsley
- Salt and ground pepper.
Method
Cook pasta in salted boiling water until tender but still firm to bite. In a bowl, lightly beat eggs and add cream, parsley, Parmesan cheese and salt and pepper. Drain pasta and return to pan. Add smoked salmon and pour over egg mixture. The heat of the pasta will cook the egg mixture. Turn into a warm serving dish.
