Regal wood roasted salmon with tomato and zucchini penne
A seafood adaptation of an Italian favourite

Ingredients
- 3 tablespoons olive oil
- 1 onion finely chopped
- 1 clove garlic sliced
- 400 gram tin tomatoes in juice
- 3 zucchini sliced
- rock salt and ground black pepper to taste
- pinch sugar
- grated rind of 1 lemon
- 200 gram pack Regal Wood Roasted Salmon
- 400 grams penne cooked al dente
- 1 tablespoon olive oil
- 1/2 cup parmesan cheese grate
Method
1. Soften the onion in the olive oil over a low heat.
2. Add the garlic and cook for a couple a minutes.
3. Chop the tomatoes and add them to the onion and garlic.
4. Simmer for 5 minutes.
5. Add the zucchini, seasonings and sugar.
6. Simmer for a further 5 minutes or until the zucchini is tender.
7. Stir in the lemon rind. Break the Regal Wood Roasted Salmon into pieces and gently stir it through the sauce.
8. Stir the olive oil and parmesan through the penne and serve. Spoon over the sauce.
