Regal Wood Roasted Salmon and spinach salad

Ingredients
- 8 slices thin cut French bread
- olive oil spray
- 1/4 cup parmesan cheese grated
- 150 grams baby spinach leaves
- 1/4 cup your favourite vinaigrette
- 3 tablespoons grilled pinenuts
- 1 200 gram pack Regal Hungarian Wood Roasted Salmon
- 4 hard boiled eggs
Method
1. Spray the French bread with a little olive oil and sprinkle on the grated parmesan cheese. Grill the bread until golden.
2. Place the spinach in a bowl and gently toss through the dressing.
3. Add the pinenuts and Regal Wood Roasted Salmon broken into bite-size pieces.
4. Cut the eggs in half and separate the whites from the yolks. Slice the whites and sprinkle over the salad. Crumble the egg yolks.
5. Place the grilled sliced French bread in the salad and serve
