Regal smoked salmon tabouleh

Ingredients
- 1 1/2 cups burghul wheat
- 1/2 cup lemon juice
- ground black pepper and salt to taste
- 4 spring onions finely chopped
- 3/4 cup flat leafed parsley chopped
- 1/2 cup fresh mint leaves chopped
- 1 telegraph cucumber peeled
- 2 tomatoes chopped
- 1/4 cup extra virgin olive oil
- 1 200 gram pack Regal Hungarian Wood Roasted Salmon
- pita bread
Method
1. Place the wheat in a bowl and cover with cold water. Soak for 1 hour.
2. Drain and transfer to a clean tea towel. Thoroughly squeeze out all the remaining water.
3. Combine the wheat, lemon juice, seasonings, spring onion, parsley, mint, cucumber, tomato and Regal Hungarian Wood Roasted Salmon broken into pieces.
4. Drizzle the tabouleh with the olive oil and serve with pita bread
