Regal smoked salmon quiche

Ingredients
- 100 gram packet Regal Smoked Salmon Slices
- 400 gram packet crusty pie pastry
- 4 eggs
- 1 cup milk
- 3 tablespoons chopped fresh parsley
- Dill and chives, mixed salt
- freshly ground black pepper
Method
1. Roll pastry out to 2mm thickness and use to line a 20cm quiche dish.
2. Trim edges by rolling rolling pin over the edge of the dish.
3. Bake blind at 190 degrees C for 10 minutes.
4. Remove baking blind material and return pastry to oven for 2 minutes to dry out.
5. Lightly beat eggs and milk together until combined.
6. Mix in herbs, salt and pepper.
7. Pour into prepared pastry shell.
8. Cut salmon into 1 cm strips and arrange over the egg mixture.
9. Bake at 180 degrees C for 40 minutes or until quiche is set.
10. Serve with a green salad.
