Ingredients
- 3/4 cup Wild Rice
- 2 Medium potatoes
- 1 Egg
- 1/2 teaspoon Salt
- 1 teaspoon Prepared Dijon Mustard
- Freshly ground blackpepper
- 2 tablespoons oil
- 3/4 cup Cream cheese
- 2 tablespoons chopped fresh chives
- 200 grams Smoked Salmon
- Chives for garnish
Method
1. Cook rice in boiling salted water for 25 minutes. Drain.
2. Peel potatoes and grate.
3. Mix rice, potatoes, egg, salt, pepper and mustard together.
4. Heat oil in a frying pan.
5. Measure half cupsful of rice mixture into pan, spreading out to flatten. Cook until golden.
6. Turn and cook second side until golden and keep warm while cooking remaining mixture.
7. Mix cream cheese and chives together.
8. Spread on pancakes.
9. Top with smoked salmon and garnish with chives
