Regal Salmon fillet with orange and thyme

Ingredients
- 1/4 cup orange juice
- 1 teaspoon orange zest
- 2 teaspoons honey
- 2 teaspoons fresh thyme sprigs
- 1 Regal Salmon fillet, pin bones removed
- chopped fresh herbs for garnish
Method
1. Combine orange juice, zest, honey and thyme sprigs in a small bowl. Place the fillet skin side down in a large baking dish lined with foil and pour over the orange and honey mixture.
2. Cook in a preheated oven at 200°C for 15 minutes or until the fillet is just cooked through. Place under a grill for a further 2 to 3 minutes until the salmon starts to brown.
3. Place the salmon on a serving platter and garnish with fresh herbs. Serve with baby potatoes garnished with fresh mint and green beans.
