Quick and chic Regal Salmon and pesto parcels

Ingredients
- 50 grams butter
- 4 sheets filo pastry
- 800 grams Fresh Regal Salmon Fillets
- 2 tablespoons basil pesto
Pesto Sauce
- 200 gram pot low fat sour cream
- 1 tablespoon basil pesto
- 1 tablespoon lemon juice
- 1/2 teaspoon grated lemon rind
Method
1. Melt butter. Brush each sheet of filo pastry with butter and fold in half crosswise.
2. Cut salmon into four pieces. place a piece of salmon on each piece of folded filo.
3. Spread each piece of salmon with basil pesto. Fold pastry over salmon, folding and rolling to enclose the salmon.
4. Place on a greased baking tray and brush parcels with remaining butter.
5. Bake at 200ûC for 15 minutes or until pastry is golden.
Pesto Sauce
1. Mix sour cream, pesto, lemon juice and lemon rind together until combined.
