Potato Salad Medley with Smoked Salmon and Horseradish
A smoked salmon and potato salad with an added horseradish kick.

Ingredients
- 1 kg pack potato salad medley, cut in half lengthways
- 125g mayonnaise
- 1½ x 15ml spoons horseradish
- ½ x 15g pack fresh dill, finely chopped
- 125g pack smoked salmon, chopped into 1cm strips
- 2 x 40g bags rocket
- salt and freshly ground black pepper
Method
Cook the potatoes following the pack instructions, strain and leave to cool.
Place the mayonnaise in a bowl and stir in the horseradish, dill and salmon. Season to taste.
When the potatoes are cold mix carefully with the salmon mixture and pile onto a bed of rocket leaves.
Garnish with a little more dill if desired.
