Poached King Salmon Fillet

Poached Salmon with a Lemon and Dill Dressing.

Recipe Information:

Serves: Salmon Portion Course Cooking Method Preparation Time:
4 Fillet Main, Savoury Microwave, Poach Less than 30 minutes

Ingredients:

½ pound King salmon fillet

For the Sauce

  • 1 cup wine or water
  • 1 cup clam juice
  • juice from one fresh-squeezed lemon
  • 4 fresh dill sprigs
  • fresh ground pepper to taste

Method:

For the Sauce

In microwave thoroughly heat to a boil all liquid ingrediants, herbs and seasoning.

For the Salmon

Gently add the salmon to the fully heated liquid making sure the it is fully immersed. Place back in the microwave for approximately 2.5 minutes at full power. Make sure salmon flakes easily with a fork. If the salmon still has skin on at this point it should easily peel away from the flesh. Gently lift salmon out of the water and place onto serving tray. Serve with a fresh dill garnish, slices of lemon and a dollop of mayonnaise. May be served hot or cold.
