Pasta Spirali with Salmon, Sweetcorn, Creme Fraiche and Chives

This simple salmon dish is easy to prepare and provides a filling course for the hungriest salmon lover.

Recipe Information:

4 Fresh Salmon, Canned Main Grill Less than 30 minutes

Ingredients:

  • 200g spirali pasta or other dried pasta shape
  • 250g salmon fillet, cooked and flaked
  • 198g can sweetcorn , drained
  • 200g tub creme fraiche
  • 20g pack chives, chopped
  • salt and freshly ground black pepper ( optional)

Method:

Cook salmon using any preferred method - perhaps lightly season and place under a medium heat grill for 10-15 minutes or until cooked through.

Cook the pasta, following instructions on the pack for approximately 10 minutes until just cooked. Drain well.

Add the salmon flakes, sweetcorn and creme fraiche and heat gently, stirring occasionally until heated through. Stir in the chives and any seasoning and serve with carrot and courgette ribbons (shave 2 carrots and 2 courgettes lengthways with a potato peeler and cook in boiling water for 2 - 3 minutes until just cooked. )
