Paprika Salmon and Beans
Boneless salmon fillets fried in paprika and served on a bed of fried peppers and mixed beans in chilli sauce.

Ingredients
- 3 x 15ml spoons plain flour
- salt and freshly ground black pepper
- 5ml spoon paprika
- 2 x 400g packs boneless 2 salmon fillets
- 2 x 15ml spoons oil
- 1 red and 1 yellow pepper, deseeded and cut into 5cm pieces
- 2 x 420g cans BGTY mixed beans in chilli sauce
- 20g pack flat leaf parsley, finely chopped
Method
In a bowl combine the flour, seasoning and paprika. Use to coat the salmon fillets.
Heat a 15ml spoon of the oil in a frying pan and cook the salmon fillets for 15 minutes, turning occasionally. Remove and put to one side to keep warm.
In the same frying pan heat the remaining oil and cook the peppers for 2-3 minutes then add the mixed beans in chilli sauce and heat through for 5 minutes. Finish with the parsley.
Pile the beans onto individual serving plates and top with a salmon fillet, serve.
