Pan-Fried Salmon with Chilli Oil, Cucumber and Sesame Salad
Spicy pan-fried salmon fillets - includes 'Ass-kickin' Olive Oil with chilli! And yes, it does have a kick to it!

Ingredients
- 150ml Ass-kickin olive oil
- 2 x 300g packs salmon fillets, skin on
- 1 cucumber, peeled and finely sliced
- 3 x 15ml spoons mirin
- 2cm piece root ginger, peeled and grated
- 3 x 15ml spoons sesame seeds
- 4 salad onions, finely chopped
Method
Pour the oil into a bowl and place the pieces of salmon into the oil and marinate for half an hour.
Place the cucumber slices into a bowl.
Add the mirin to the sliced cucumber. Squeeze the grated ginger over the bowl. Lightly mix the cucumber with the ginger juice and mirin.
Preheat a grill to a high setting. Place the sesame seeds onto a baking sheet and toast them under the grill for approximately 1 minute until they are golden brown.
Place a frying pan over a moderate heat. When the frying pan is hot remove the salmon from the oil and place into the hot pan. Cook for 3-4 minutes on each side. Remove the salmon from the pan and place to one side.
Divide the cucumber between four plates. Place one piece of salmon on each plate and sprinkle over the toasted sesame seeds and salad onion.
