Organic Smoked Salmon with Penne

Smoked salmon mixed with creme fraiche, lemon and onion then stirred into penne to create a quick salmon pasta dish.

Ingredients

  • 250g organic penne
  • 15g organic butter
  • bunch organic salad onions, finely sliced
  • 200ml organic creme fraiche
  • grated zest of 1 organic lemon
  • 25g freshly chopped organic flat leaf parsley
  • salt and freshly ground black pepper
  • 125g organic smoked Scottish salmon, cut into strips

Method

Cook the penne in lightly salted boiling water until tender, following instructions on the pack.

Meanwhile, melt the butter in a saucepan, add the onions and cook for 1 minute. Stir in the creme fraiche, lemon zest, most of the parsley and seasoning to taste.

Stir in the cooked, drained penne and smoked salmon.

Serve sprinkled with the remaining chopped parsley.
