A delicious way to prepare salmon. The fig leaf infuses the salmon while cooking and makes for great plate presentation.

Ingredients
- 4 x 200gm fillets of salmon
- 2 large fig leaves
- 2 large figs
Method
Salmon
1. Cut figs to size and wrap around salmon portions, so it creates a parcel.
2. Drizzle in olive oil
3. Bake in hot 180 c oven for about 8 minutes.
Figs
1. Halve figs, drizzle lightly in olive oil and roast until tender
2. Place salmon on warmed plates, still wrapped in fig leaf, with 1/2 roasted fig. Serve with risotto.
