Marinated Salmon with New Potatoes and Basil Butter

Salmon steak cooked with wine and shallot; served with new potatoes and basil butter - a meal to relish.

4 Fresh Salmon, Steaks Main Boil Over 1 hour

Ingredients:

  • 4 middle cut salmon steaks, each weighing 175g
  • 150ml dry white wine
  • 1 shallot, chopped very finely
  • 1 bouquet garni
  • salt and freshly ground black pepper
  • 1 large basil sprig
  • 750g baby new potatoes
  • 125g butter
  • 4 x 15ml spoons chopped basil
  • salt and freshly ground black pepper
  • basil sprigs to garnish
  • lemon slices or wedges
  • dill sprigs

Method:

Place the salmon in a large dish, pour over the wine, add the shallots and bouquet garni and season well with salt and pepper. Cover and chill for 1 hour.

Whilst the salmon is chilling, place the potatoes in a saucepan of cold water with the basil sprig and salt. Bring to the boil, cover and simmer for 10-15 minutes until tender. Drain in a colander and remove the basil. Melt the butter in a pan, add the chopped basil and cook for 30 seconds, stirring, take care not to brown the butter. Serve with the salmon.

Transfer the chillled salmon to a large frying pan with a lid, bring to the boil, then cover and simmer very gently for 4 minutes, turning the fish once.

Using a fish slice, lift the salmon from the pan onto a warmed serving plate. Garnish with the lemon and dill and serve with the potatoes.
