Marinated Salmon with Dill
This unusual salmon dish requires freezing, but is a very tasty way to serve the tailpiece.

Ingredients
- 500g tailpiece salmon
- 15ml spoon light brown soft sugar
- 5ml spoon sea-salt
- 12 black peppercorns, crushed
- handful of dill, chopped
Method
Cut the salmon in half lengthways; remove the bones.
Mix together the remaining ingredients and rub a third into the skin of one piece of salmon. Place skin side down on a large piece of foil and rub another third over the flesh. Place the other piece of salmon on top, flesh side down; rub the remaining mixture into the skin.
To freeze: Wrap in the foil, seal, label and freeze.
To thaw: Remove from the freezer 3 days before needed, weight down and leave in the refrigerator, turning once a day.
To serve: Drain off all the liquid and cut the salmon into thin slices. Serve with rye bread and a little creamy mustard dressing, if you wish.
