Marinated Salmon Steaks
This salmon dish will require 6-12 hours to marinate, but the wait is more than worth it!

Ingredients:
- 4 salmon steaks, weighing approximately 150g each
- 4 x 15ml spoons olive oil
- 3 salad onions, chopped finely
- 1 clove garlic, crushed
- 15ml spoon fresh dill, coarsely chopped
- 15ml spoon fresh flat leaf parsley, coarsely chopped
- 15ml spoon fresh chives, snipped finely (leaving a few whole for garnish)
- 2 x 15ml spoons white wine vinegar
- grated zest and juice of 1 lime
- salt and freshly ground black pepper
Method:
Place the salmon in a shallow pan or microwaveable dish.
Pour over enough boiling water to cover the fish. If using a pan, simmer gently for 5 minutes. Or microwave 650/750W on full power for 2 minutes.
Drain the salmon carefully and place on one side to cool.
Combine the remaining ingredients, pour over the salmon steaks and marinate for 6-12 hours in the refrigerator.
Bake in a preheated oven 180°C, 350°F, Gas Mark 4 for 15-20 minutes. Or microwave 650/750W on full power for 2 minutes.
Serve immediately garnished with a few whole chives across each steak.
