Luxury Salmon Salad
This salmon salad can be prepared in minutes and with olives and quails eggs is no ordinary salad.

Ingredients
- 2 salmon steaks, cooked
- 1 bag mixed leaves
- 2 tomatoes, peeled and cut into wedges
- 6 hard boiled quails eggs, peeled and halved
- 110g blanched green beans
- black olives
- French dressing
- freshly chopped herbs
Method
On a big dish of mixed leaves, sprinkle the peeled tomato wedges, hard boiled quails eggs, the blanched green beans, a handful of black olives and the cooked salmon steaks* that have been roughly flaked.
Dress with a creamy French dressing and sprinkle with some fresh chopped herbs.
* The salmon steaks can be cooked to suit. We recommend baking them in a covered dish with some lemon juice and salt pepper. Place in a covered dish at 180C for approximately 20 minutes or until cooked. (cooking times will vary greatly according to size and shape of cutlets)
