Herby Salmon Spaghetti

With a creamy sauce and mange tout, this is a filling meal that can be ready in the time it takes to boil some pasta.

Recipe Information:

Serves: Salmon Portion Course Cooking Method Preparation Time:
4 Fresh Salmon, Fillet Main Pan Less than 30 minutes

Ingredients:

  • 300g dried spaghetti
  • 100g mange tout, trimmed and cut diagonally
  • 284ml carton buttermilk
  • ½ x 20g pack dill or chives, finely chopped
  • salt and freshly ground black pepper
  • 320 - 340g pack salmon fillet, cooked as per pack instructions and flaked removing the skin and any bones

Method:

Cook the pasta as per pack instructions, then 1 - 2 minutes before the cooking time is complete add the mange tout.

In the meantime, combine the buttermilk, dill and seasoning. Drain the pasta, then add the buttermilk mixture and fish, combine and heat through in a pan.

Dish onto plates and serve.
