Grilled Tequila Salmon
Marinaded, grilled salmon with fresh vegetables and Sesame-Chive Butter on a bed of Soba Noodles

Ingredients
- 4 (4 to 6 oz. each) Silver Salmon fillets, thawed (Sockeye or King Salmon may be used instead of Sockeye Salmon)
- Canola Oil
- Tequila
- Soy Sauce
- 3 Limes
- 3 lbs. unsalted butter
- chives or green onions
- 1/4 cup sesame seed oil
- salt and pepper
- Red Pepper
- Green Pepper
- Red Onion
- Celery
- Carrots
- Soba noodles (egg noodles) optional
Method
Marinade:
Mix equal parts of Canola Oil, Tequila and Soy Sauce (enough to cover salmon). Squeeze 3 limes into marinade and place the squeezed limes in the marinade also. Marinate salmon for 2-3 hours before grilling.
Sesame-Chive Butter:
Blend 3 pounds of unsalted butter with 1/4 cup of sesame seed oil and add the chives (or green onions) to the blend. Salt and pepper to taste.
Fresh Julienne vegetables:
Slice uncooked red pepper, green pepper, red onion, celery and carrots into long narrow julienne strips. Refrigerate until serving.
Grilling:
Remove the Salmon from the marinade and grill until done to suit you.
