Grilled Salmon, Chive and Tomato Hollandaise

Salmon, tomatoes and Hollandaise sauce served with potatoes for a filling meal.

4 Fresh Salmon, Fillet Main Fry 30 mins to 1 hour

Ingredients:

  • 250g new potatoes
  • 3 tomatoes
  • 15ml spoon vegetable oil
  • 500g salmon fillet, skinned and cut into 4
  • salt and freshly ground black pepper
  • 250ml carton hollandaise sauce
  • 15g pack chives, finely chopped

Method:

Put the potatoes in boiling salted water and simmer gently until cooked. Drain and slice.

Bring a small pan of water to the boil and immerse the tomatoes for 10 seconds, refresh in iced water. Peel, quarter and remove the seeds from the tomatoes. Dice them quite small and set aside.

Heat the oil in a frying pan, season the salmon and cook on each side for 3-4 minutes.

To serve, heat the hollandaise sauce and add the tomatoes and chives. Put the potatoes on a plate, top with the salmon and spoon over the sauce.
