Potato and Smoked Salmon Salad with Green Beans and Black Olives

Ingredients
- 450g new potatoes
- 225g french beans topped
- 1 punnet cherry tomatoes halved
- 12 marinated black olives
- virgin olive oil
- freshly squeezed lemon juice
- 4 x 6oz Flaky Smoked Salmon
- oil for brushing
- freshly ground black pepper
- basil leaves and lemon slices to garnish
Method
Cut the potatoes in half and cook them, drain. Plunge the french beans into boiling salted water for 3 minutes until cooked, but still with a bite. Place the new potatotes in a warm dish with the french beans, tomatoes, olives and olive oil. Grind black pepper over the vegetables and add lemon juice to taste. Heat a ribbed pan until very hot. Brush the Flaky Smoked Salmon and grind black pepper over the fish. Cook the fish for 3-4 minutes, turning once. Arrange in the dish with the potatoes, beans, etc, garnish with basil leaves and lemon and serve immediately. Extremely good!
