Grilled Salmon with a Balsamic and Maple Marinade

Ingredients
- 1-2 pounds of salmon steaks or portions
For the Marinade
- 1/3 cup fresh orange juice
- 1/3 cup maple syrup
- 1 tablespoon honey
- 3 tablespoons balsamic vinegar
- 3 cloves of garlic, minced
- 1 tablespoon olive oil
Method
Preheat the grill
Marinade
Combine the orange juice, maple syrup, honey, vinegar and garlic in a saucepan. Simmer for approximately 5 minutes until it slightly thickens. Remove from the heat and cool. Once cooled, add olive oil.
The marinade works really well if you can refrigerate it several hours before using it on the salmon.
Generously apply glaze to both sides of salmon. Place salmon, flesh side first, onto hot grill. Re-apply glaze and flip to other side. Cook salmon until it flakes easily being careful not to overcook (about 4-5 minutes on each side.)
