Fresh salmon with asparagus and mustard sauce

Ingredients
- 250 grams Fresh Asparagus
- 4 fresh Regal Salmon Steaks
- Freshly ground black pepper
Mustard Sauce
- 50 grams Butter
- 1/4 Cup Lemon Juice
- 2 teaspoons dried tarragon
- 1 teaspoon Dijon mustard
Method
1. Wash asparagus and break off tough ends. Bring a frying pan of water to the boil.
2. Add asparagus and place salmon on top. Cover and simmer for 3 minutes.
3. Turn off heat and leave covered for 5 minutes. Drain.
4. Arrange asparagus on a serving plate. Arrange salmon on top.
5. Serve with Mustard Sauce. Grind black pepper over.
Mustard Sauce
1. Melt butter. Add lemon juice, tarragon and mustard, mixing to combine.
2. Bring to the boil.
