Fish Pie

Fish pie: Simple, scrumptious and satisfying.

Recipe Information:

Serves: Salmon Portion Course Cooking Method Preparation Time:
2 Fresh Salmon, Fillet Main Bake, Fry 30 mins to 1 hour

Ingredients:

  • 15ml spoon oil
  • 25g butter
  • 500g pack skinless, boneless salmon fillet, cut into 2cm cubes
  • 75g frozen broccoli florets, defrosted
  • 1 pack parsley sauce
  • 8 x 15ml spoons instant mashed potato mix made up with 500ml boiling water
  • To accompany: crisp green salad

Method:

Preheat the oven to 200°C, 400°F, gas mark 6.

Heat the oil and butter in a frying pan then add the salmon and broccoli and cook for 5 minutes.

Make up the sauce as per pack instructions, then gently fold into the salmon and broccoli mixture.

Transfer the mixture into 2 small ovenproof dishes.

Make up the instant mashed potato as per make-up instructions, then transfer to a piping bag fitted with a 1cm star piping nozzle. Pipe over the fish in sauce.

Place on a baking tray in the preheated oven and cook for 25-30 minutes or until golden brown on top.

Serve immediately with a crisp green salad.
