Crispy Seaside Bites
Breaded salmon cut into fingers and cooked with a lime and tomato sauce provide the perfect combination for a starter or snack.

Ingredients:
- 100g fresh white breadcrumbs
- grated zest and juice of 1 lime
- salt and freshly ground black pepper
- 2 x 260g packs skinless, boneless salmon fillets
- 1 medium egg, beaten
- 2 x 15ml spoons olive oil
- small onion,peeled and finely chopped
- clove garlic, crushed
- 400g can chopped tomatoes
- 15ml spoon tomato puree
Method:
Preheat the oven to 220°C, 425°F Gas Mark 7.
Mix together the breadcrumbs, lime zest and seasoning to taste. Cut the salmon into strips approximately 6cm x 2cm and coat in the beaten egg. Roll in the breadcrumb mixture and place on a lightly greased baking tray. Drizzle over half the oil and place in the preheated oven for approximately 12 minutes or until golden and cooked through.
Meanwhile, heat the remaining oil in a saucepan, add the onion and garlic and cook gently for 5 minutes. Add the chopped tomatoes and tomato puree with the lime juice and seasoning to taste and simmer gently for 8 - 10 minutes until reduced and slightly thickened. Serve the tomato sauce with the salmon fish fingers. Delicious served hot or cold.
