Creamy Scrambled Eggs and Smoked Salmon Vol-Au-Vents

Cream Chesse and Chive Smoked Salmon Vol-Au-Vents

Ingredients:

  • 30g smoked salmon
  • 2 Pks (1 doz) Vol-au-Vent cases
  • 5 eggs
  • 40g butter
  • 1-tablespoon chives
  • 1-tablespoon cream

Method:

Put Vol-au-Vent cases on a baking tray. Lightly beat eggs. Heat the butter and add the eggs stirring gently until mixture begins to set. Stir in smoked salmon, chives and cream. Spoon into Vol-au-Vent cases. Keep warm in slow oven. (This is really not suitable for making ahead)
