Smoked Salmon, Cod and Prawn Pie

Ingredients
- 200g Ardtaraig Smoked Salmon Trimmings
- 500g Cod
- 200g Prawns
- 600ml Fresh Milk
- 200g Grated Cheddar Cheese
- 1 Egg
- 50g Plain Flour
- Salt and Pepper
- Cayenne Pepper (to your taste)
- 50g Butter
- 700g Potatoes
Method
Place cod in a frying pan and cover with 300ml of milk and bring gently to the boil. Cover and poach for 15 - 20 minutes until fish is just cooked. Drain and keep the liquid - set the fish aside. Cook the potatoes in salted boiling water until tender.
Make a cheese sauce by melting butter in a saucepan. Add flour and cook gently until mixture forms a soft paste. Remove from heat. Keeping a little of the milk aside for the mashed potatoes, add the rest of the milk gradually and bring back to the boil stirring continuously until sauce thickens and is smooth. Add cheese, salt, pepper and cayenne. Fake cod and add to cheese sauce together with prawns and salmon trimmings - gently mix together. Spoon into a shallow ovenproof dish (approx 2 litre).
Thoroughly drain potatoes and mash with butter, beaten egg and the remaining milk. Season to taste and spoon evenly over mixture. Bake in hot oven 200c for 35 - 40 minutes until golden brown.
