Ingredients

  • 10 x 50g slivers of salmon (skin off and pin-boned)

For the garnish:

  • 75g brunoise shallot
  • 25g brunoise red chilli
  • 50 ml lemon juice/orange juice
  • 25g lemon segments
  • 25g lime zest
  • 25g chopped dill
  • 25g chopped lemon grass
  • 100ml olive oil
  • 25ml white Rioja
  • seasoning

For the autumn leaves:

  • ½ head lollo rosso
  • ½ head curly endive
  • 1 head Belgium chicory
  • 100g pousse
