Ingredients
- 10 x 50g slivers of salmon (skin off and pin-boned)
For the garnish:
- 75g brunoise shallot
- 25g brunoise red chilli
- 50 ml lemon juice/orange juice
- 25g lemon segments
- 25g lime zest
- 25g chopped dill
- 25g chopped lemon grass
- 100ml olive oil
- 25ml white Rioja
- seasoning
For the autumn leaves:
- ½ head lollo rosso
- ½ head curly endive
- 1 head Belgium chicory
- 100g pousse
