Ceviche of Salmon

An original and flavoursome starter; a little bit different, a whole lot delicious.

Recipe Information:

Serves: Salmon Portion Course Cooking Method Preparation Time:
4 Fresh Salmon, Fillet Starter Uncooked Over 1 hour

Ingredients:

  • 3 raw salmon fillets, sliced thinly
  • 2 limes
  • 1/2 lemon
  • 3 spring onions, chopped
  • 6 tbsp coconut milk
  • 1 tsp red Thai paste
  • fresh coriander

Method:

Slice the raw salmon fillets thinly and lay in a dish. Squeeze over the lime and lemon juices. Sprinkle with the chopped spring onions. Leave for as long as possible (preferably 24 hours).

Mix the coconut milk and red Thai paste together and then add some of the citrus juice and fresh coriander.

Serve the salmon as a starter with a little of the coconut dressing.
