Cajun-Style King Salmon
Cajun Seared Salmon with Nuts and Vermouth

Ingredients:
- 4 (4 to 6 oz. each) King Salmon fillets, thawed (Silver or Sockeye Salmon may be used instead of Sockeye Salmon)
- 1/3 cup butter *
- 2 tbsp. Cajun Blackened seasoning mix
- 1 tbsp. minced garlic
- 1/2 cup vermouth
- lemon wedges
- 1/4 cup finely chopped pecans or walnuts
* If desired, olive oil may be substituted for butter
Method:
Melt butter in large skillet over medium/high heat. Stir in Cajun seasoning and garlic. Cook for 2 minutes, stirring constantly. Add vermouth. Cook for 3 minutes, stirring constantly. Add Alaska Salmon fillets or steaks. Cook for 10 minutes per inch of thickness, measured at thickest part, or until fish just flakes when tested with a fork. Squeeze lemon over salmon and serve immediately
