Cajun-Style King Salmon

Cajun Seared Salmon with Nuts and Vermouth

Recipe Information:

4 Fillet Main, Savoury Other 30 mins to 1 hour

Ingredients:

  • 4 (4 to 6 oz. each) King Salmon fillets, thawed (Silver or Sockeye Salmon may be used instead of Sockeye Salmon)
  • 1/3 cup butter *
  • 2 tbsp. Cajun Blackened seasoning mix
  • 1 tbsp. minced garlic
  • 1/2 cup vermouth
  • lemon wedges
  • 1/4 cup finely chopped pecans or walnuts

* If desired, olive oil may be substituted for butter

Method:

Melt butter in large skillet over medium/high heat. Stir in Cajun seasoning and garlic. Cook for 2 minutes, stirring constantly. Add vermouth. Cook for 3 minutes, stirring constantly. Add Alaska Salmon fillets or steaks. Cook for 10 minutes per inch of thickness, measured at thickest part, or until fish just flakes when tested with a fork. Squeeze lemon over salmon and serve immediately
