Cajun Regal Salmon with vegetable medley

Ingredients
- 2 150 gram skinless salmon fillets cut in half
- 2 tablespoons Cajun spice mix
- 100 grams Green Beans
- 1 Red capicum
- 150 grams Brown field mushrooms
- 1 tablespoon Sweet chilli sauce
- 1/2 teaspoon Ground cumin
- 2 tablespoons Orange juice
- 2 tablespoons Lemon juice
- 2 tablespoons freshly chopped coriander
Method
1. Pre heat oven to 200C.
2. Place the Cajun spice in a plastic bag.
3. Toss the two fillets in the bag to coat with spice.
4. Place the fillets in a greased baking dish and bake for approximately 8 minutes.
5. Steam the green beans lightly.
6. Roast and skin the red pepper.
7. Slice the mushrooms and microwave until tender.
8. Mix together the sweet chilli sauce, ground cumin, orange juice, lemon juice and fresh coriander and serve with vegetables.
