Buckwheat Noddles with Smoked Salmon

Ingredients
- 225 g buckwheat or soba noodles
- 1 tbsp oyster sauce
- juice of ½ lemon
- 2 – 3 tbsp light olive oil
- 115 g smoked salmon, cut into strips
- 115 g young pea sprouts
- 2 ripe tomatoes, peeled, seeded and cut into strips
- 1 tbsp snipped chives
- Ground black pepper
Method
1. Cook the buckwheat or soba noodles in a large pan of boiling water until tender; according to the instructions on the packet.
2. Drain the noodles, then rinse under cold running water and drain well. Turn the noodles into a large bowl.
3. Add the oyster sauce and lemon juice and season with pepper to taste.
4. Moisten the noodles with the olive oil. Add the smoked salmon, pea sprouts, tomatoes and chives.
5. Mix well and serve immediately.
