Smoked Salmon, Prawn and Egg Gateau

Ingredients

  • 1 round granary cob loaf

For the filling:

  • 6 hard-boiled eggs
  • 150g peeled prawns
  • 200g-flaked Salar smoked salmon
  • 100ml creme fraiche
  • 100g Hellman's mayonnaise
  • 1 tablespoon finely chopped fresh chives
  • 1 tablespoon finely chopped fresh dill
  • Sea salt and Percy the black pepper mill

For the garnish:

  • Slices of cucumber
  • Lumpfish roe
  • Homemade chisps (the bought ones are called crisps)

Method

Mix together all the ingredients for the filling. Cut the loaf into four thick tiers (much like a layered sponge cake). Spread the filling thickly between the layers of bread and re-assemble the loaf.

Place the sandwich gateau on the centre of a round breadboard and garnish with cucumber slices sprinkled with lumpfish roe and swathes of hot homemade chisps.
