Smoked Salmon, Prawn and Egg Gateau

Ingredients
- 1 round granary cob loaf
For the filling:
- 6 hard-boiled eggs
- 150g peeled prawns
- 200g-flaked Salar smoked salmon
- 100ml creme fraiche
- 100g Hellman's mayonnaise
- 1 tablespoon finely chopped fresh chives
- 1 tablespoon finely chopped fresh dill
- Sea salt and Percy the black pepper mill
For the garnish:
- Slices of cucumber
- Lumpfish roe
- Homemade chisps (the bought ones are called crisps)
Method
Mix together all the ingredients for the filling. Cut the loaf into four thick tiers (much like a layered sponge cake). Spread the filling thickly between the layers of bread and re-assemble the loaf.
Place the sandwich gateau on the centre of a round breadboard and garnish with cucumber slices sprinkled with lumpfish roe and swathes of hot homemade chisps.
