Ingredients
Salmon
- 4 Regal salmon steaks
Gremolata
- 3 tablespoons chopped parsley
- 1 garlic clove, crushed
- 1 finely grated lemon rind
Salad
- 200g green beans
- 4 medium tomatoes
- 1 red onion, finely sliced
- 1/4 cup black olives
- 2 tablespoons basil leaves
Dressing
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 1 garlic clove, crushed
- 1 teaspoon brown sugar
Method
1. Cook the salmon steaks over a preheated barbeque or under a preheated grill for 3 to 4 minutes or until just cooked. While the steaks are cooking, prepare the gremolata. Combine the parsley, garlic and lemon rind in a small bowl. Set aside.
2. Prepare the salad – combine all the ingredients in a salad bowl. Add the dressing and toss gently.
3. Place the salmon steaks onto serving plates. Top with the gremolata and serve with the salad and boiled baby potatoes.
