Barbecued Salmon Brushed with Citrus Oil on Sweet Chilli and Spinach Couscous

A favourite with barbeque lovers and, with citrus fruits, perfect for the summer months.

Recipe Information:

Serves: Salmon Portion Course Cooking Method Preparation Time:
4 Fresh Salmon, Fillet Main Barbecue, Griddle, Grill Less than 30 minutes

Ingredients:

  • 4 salmon fillets, brushed with plenty of olive oil mixed with fresh citrus juice
  • couscous
  • 200g (7oz) baby spinach
  • 1 grilled red pepper, sliced
  • sweet chilli sauce, to taste

Method:

Barbecue or griddle the salmon fillets brushed with plenty of olive oil mixed with fresh citrus juice.

Prepare a bowl of hot couscous, stir in the baby spinach, sliced grilled red pepper and sweet chilli sauce to taste.

Serve the salmon on the bed of couscous.
