Ingredients
- 4 salmon fillets, brushed with plenty of olive oil mixed with fresh citrus juice
- couscous
- 200g (7oz) baby spinach
- 1 grilled red pepper, sliced
- sweet chilli sauce, to taste
Method
Barbecue or griddle the salmon fillets brushed with plenty of olive oil mixed with fresh citrus juice.
Prepare a bowl of hot couscous, stir in the baby spinach, sliced grilled red pepper and sweet chilli sauce to taste.
Serve the salmon on the bed of couscous.
