Baked Regal Salmon with caper sauce

Ingredients
Baked Salmon
- 2 tablespoons Light Soy Sauce
- 1/2 teaspoon Sugar
- 1 600 gram Fresh Regal Salmon Fillet
Caper souce
- 1/2 Cup Parsley
- 1/2 cup Roughly chopped chives
- 2 tablespoons Capers
- 2 tablespoons Chopped Onions
- 1/2 Cup Olive Oil
- 1 tablespoon Lemon or Lime Juice
- 1 Hard boiled egg
- Freshly ground black pepper
Method
Baked Salmon
1. Combine soy sauce and sugar. Brush each piece of salmon with soy sauce mixture. Place on foil
2. Place on foil lined grilling dish. Bake at 180°C for approx. 8-10 minutes.
3. Remove from oven and leave to stand 2-4 minutes before serving. Serve hot with Caper Sauce.
Caper Sauce
1. Place parsley, chives, capers and onion in the bowl of a food processor or blender.
2. Process until finely chopped. Add olive oil, lemon or lime juice and egg.
3. Process until smooth. Season with freshly ground black pepper
