Avruga Salmon Rosti

Omelette, topped smoked salmon, crème fraîche and avruga. Delicious.

Recipe Information:

1 Smoked Salmon, Avruga, Fillet Starter Fry Less than 30 minutes

Ingredients:

  • 2 medium Desirée potatoes
  • one red onion
  • 2 egg yolks
  • 140 ml crème fraîche
  • 125g organic smoked salmon
  • 55g Avruga

Method:

Peel and grate two potatoes (preferably Desirée) and a small onion. Squeeze out as much of the excess moisture as possible and add the yolk of two eggs. Take a tablespoon of the mixture and flatten it in your hand. Shallow fry until golden brown (approx. 5 minutes per side). Top with organic smoked salmon, crème fraîche and Avruga. Serve whilst still warm.
